Does a wine fridge need humidity?

The short answer first, then the reasons.

Yes, but only for the sake of the cork. A cork kept in dry air slowly dries, shrinks and lets air into the bottle; a cork kept at 50 to 70 percent humidity stays supple and keeps its seal. Most wine coolers run a little drier than a cellar, and the remedy is small.

What the cork needs

Natural cork is bark, and it behaves like wood: it swells when moist and contracts when dry. Inside the bottle, the wet end of the cork is kept moist by the wine, so long as the bottle lies on its side. The dry end faces the air of the cooler. If that air is very dry for months, the cork loses moisture from the outside in, pulls away from the glass by a hair, and oxygen begins to pass. The result, years later, is a wine that tastes older than it should, or a cork that crumbles under the corkscrew.

The range

A traditional cellar sits at 60 to 80 percent, and 70 is the number the old cellar books name. Anything from 50 to 70 percent is fine for a cooler. A little above 70 does the wine no harm, though labels may lift and mold may show on the capsules. Below 40 percent for a season is where corks begin to suffer. Short dips do not matter: it is the average over months that the cork answers to.

Why a cooler runs drier

A compressor cooler cools the air by passing it over a cold coil; water condenses on the coil and drains away, and the air comes back colder and drier, as it does in a kitchen refrigerator. Many compressor coolers settle in the 40 to 55 percent range as a result — higher in a humid climate, lower in a dry one or in a heated winter room. Thermoelectric coolers, with no coil, tend to hold the room’s own humidity.

A small tray of water

The old remedy still works. Set a shallow dish of water, or a damp sponge in a dish, on the lowest shelf; the air takes up what it needs, and you refill it when it is dry. A small hygrometer in a corner says whether it is enough. Keep the dish away from the labels, and do not let it stand so long that it grows anything.

On their side

Lying a bottle down is the other half of the answer. The wine wets the cork from inside, and a cork that is moist on that end needs far less from the air on the other. A bottle stored upright in a dry cooler suffers twice; the same bottle lying down in the same cooler is mostly fine. More on this: Should wine be stored on its side?

What humidity does not affect

A screwcap is tin and plastic and does not dry; a bottle under screwcap, or under a synthetic stopper, can sit in bone-dry air for years without harm. The cork of a sparkling wine is held by a cage, and the pressure inside keeps it pressed to the glass. And the wine itself never knows: humidity is a matter for the stopper, not the liquid.

When to worry

Worry when the hygrometer reads below 40 for weeks; when a cork comes out dry and brittle for half its length; when the fill in an unopened bottle has dropped; or when a cooler stands in a heated room through a dry winter with nothing to offset it. Do not worry about 45 in August, a day with the door left open, or a damp basement that reads 75. The cork is patient, and the numbers that harm it take months to do so.

Where Verreful comes in

Verreful lays out your cooler’s real shelves and zones — many models arrive already configured — and every bottle keeps its place, so the bottles that have lain longest, whose corks have asked the most of the air, are easy to find and check. Every bottle with a vintage carries an estimated drinking window — aging, ready, at peak or past peak — and the shelf shows it at a glance; a cork that has let air in shows itself first in a wine that tastes further along than its window says, and the window gives you something to measure against. It works in the cellar without signal; what you save waits and syncs.
