How do I choose wine from a restaurant wine list?
The short answer first, then the reasons.
Start from what the table is eating and what the table likes, not from the price column. Walk the list by style or region to the section that fits, use a glass as a scout when the list offers one, ask the staff one specific question, and choose the bottle you have reason to believe in. The value usually sits in the middle of the list; the second-cheapest bottle is where restaurants expect you to hide.
Begin with the dish and the table
A list is long; a meal is not. Settle two things first. What is coming to the table — fish, a roast, something with chili, a spread of small plates? And who is drinking — one palate or four, people who like a soft red or people who like a sharp white? A dish that is light and bright wants a wine that is too; a rich dish can carry a fuller one; a table that cannot agree is well served by a rosé or a sparkling wine, which get on with nearly everything. These two answers rule out most of the list at once, and that is the point.
How to walk a list
Lists are arranged one of three ways, and each has its own path through it.
- By style: sparkling, then whites from light to full, rosé, then reds from light to full. Find the weight you want, then read only that stretch.
- By country and region: France, Italy, Spain, the Americas and so on, with each region implying its grapes. Go to the places whose wines you already know you like, and let the neighbors of those places be your second choice.
- By grape: common in the New World. The simplest to read, if you know your grapes; the quickest to narrow, if you know your palate.
Within the section, look at the price band you are comfortable in, and read every name there. A wine you have never heard of in the middle of the band is often the one the restaurant chose with the most care.
The second-cheapest trap, and where the value sits
Restaurants mark wine up, commonly two to three times what a shop would charge, and the multiple is usually steepest at the bottom of the list, because that is where the shy diner goes: not the cheapest, which looks mean, but the one just above it. The famous names at the top carry the famous markups. The middle of the list is where a restaurant can afford to be generous, and where the wines someone genuinely liked tend to be.
A glass as a scout
When a list offers wines by the glass, a glass is a cheap way to find out. Try the one nearest the style you are circling; if it pleases, ask for the bottle of it, or for its neighbor on the list. The by-the-glass page also tells you what the restaurant has open and pouring tonight.
Ask one specific question
“What is good?” gets a shrug or a sales pitch. A brief gets a real answer: “We are having the lamb and the sea bass, we like reds with some fruit but not too heavy, and we would like to stay around this line of the list.” Give the dish, the taste and the budget, and point at the list rather than naming a figure aloud. A sommelier would rather find you the right bottle than the dearest one.
Sending a bottle back
The taste poured before the bottle is served is for faults, not for second thoughts. A wine that smells of wet cardboard or a damp cellar is corked; one that is flat, vinegary or fizzing when it should not be is spoiled. Say so, quietly, and it will be replaced without argument. A bottle that is sound but not to your taste is yours; drink it, and write down what it taught you.
Bring your own palate
Every trick above is a way of standing in for one thing: knowing what you like. A diner who can say “I like crisp whites with high acidity and reds with soft tannin” reads any list in a minute. That knowledge comes from paying attention to the glass in front of you, bottle after bottle, and keeping a record. It is the whole game.
Where Verreful comes in
Photograph the restaurant’s wine list and Verreful reads it. The wines that suit your palate come first, at your budget; where the house cannot be sure of a wine, it shows no number rather than guess. It knows your palate because a 60-second taste quiz seeded it and every rating since has refined it.
When a bottle arrives, point the camera at the label and the house says plainly whether it suits you. At home, Tonight’s pour picks from the bottles you own, weighed for palate and readiness. Free on the App Store and Google Play, in English and Turkish.
